Interceptor TOP qualities = SPEED, RANGE, Longrange sensors and weapons. Maneuverability CAN be sacrificed for these things IF nessesary. Responds to a threat quickly and decisevly. An interceptor needs to be able to get out to a target quickly and deter the target from it's mission. Doesnt HAVE to kill the target but DOES have to make it change it's mind. F-111 would have been a good Interceptor, but a BAD fighter.
Fighter TOP qualities = Maneuverability, Leathality, Reliability too. Generaly responds to anticipated threats as in patroling an area and attacking anything that pops up. Establishes air superiority in an area and keeps it. F-16 great fighter, lousy interceptor.
Many aircraft straddle the two definitions , the F-14 is an interceptor that can fight because of it's VG wings. And the F-15 is a fighter that can intercept because of it's blinding speed and ability to carry a LARGE amount of external fuel.
